Quick and Easy Low-Carb Mushroom Salad for Your BBQ in Just 10 Minutes


Ingredients

 

  • 2 pounds mushrooms


  • 4 tablespoons extra virgin olive oil

     

  • 1 tablespoon balsamic vinegar


  • 3 cloves fresh garlic minced


  • 1/2 teaspoon fresh thyme, chopped


  • 2 tablespoons fresh chopped parsley


  • salt and pepper to taste


  • 1/2 teaspoon red chili pepper flakes, optional


Directions


Smart Tip:


To clean mushrooms 


Brush off any excess dirt with a damp paper towel. 


Do not rinse mushrooms under running water; this will leave salad watery. 


Slice mushrooms lengthwise.


Step 1:

In a bowl, combine in the mixture of olive oil, balsamic, garlic, thyme, parsley, salt, pepper, and red chili flakes 


Add mushrooms to a large salad bowl and pour the mixture over. 


Toss to coat well and marinate the sliced mushrooms for 35 minutes in the refrigerator or at room temperature.


Step 2:

Serve the marinated mushroom salad with a sprinkle of fresh parsley and a drizzle of olive oil, if you like.
