Delicious Artichoke Hearts in just 15 minutes.

Ingredients:

To make four servings:

  • 1 (12 to 14-ounce) bag frozen artichoke hearts, thawed and dried

  • 2 tablespoons olive oil

  • 1 small shallot or 1/4 yellow onion, chopped

  • 2 cloves garlic, chopped

  • 1/4 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

  • 2 tablespoons fresh lemon juice

  • 2 tablespoons unsalted butter, thinly sliced and chilled

  • 1 tablespoon chopped tender herbs (parsley, basil, tarragon, or chives)

Directions:

Step 1:

Pat the thawed artichokes dry with paper towels and use kitchen shears to trim away any leaf tips.

Step 2:

Heat the oil in a large sauté pan over medium-high heat.

Add the shallot and sauté until golden brown, about 2 minutes.

Add the garlic and cook about 30 seconds, careful to not burn!

Step 3:

Add the artichokes, salt, and pepper and cook, tossing occasionally, until the artichokes are heated through and are beginning to brown in places, 3 to 4 minutes.

Step 4:

Remove the pan from the heat, add the lemon juice, and stir gently to combine.

Step 5:

Fold in the cold butter and herbs and let stand until the butter is melted, about 1 minute.

Serve immediately.
