Bean Salad












Ingredients


lime (zested and juiced)


1 tsp. cilantro (dried)


2 tsp. olive oil


salt


pepper


30 oz. black beans (rinsed and drained)


1 oz. canned corn (rinsed and drained)


1/2 red onion (diced)


large tomato (diced)


avocado (diced)


Directions


Step 1


Gather all ingredients.


Step 2


Combine black beans, corn, red onion, avacado, large tomato, in a large bowl; toss to mix.


Step 3


Whisk together oil, vinegar, salt, and pepper in a separate bowl pour over bean mixture. Mix well.


Step 4


Refrigerate salad for 8 hours to overnight before serving.
